These brownies are: Moist. Decadent. Foolproof.
In my opinion, fudgy brownies trump cakey brownies by a landslide for one reason only: mouthfeel. When I'm biting into a brownie I need to know that I'm going to be getting some chewy crumb on my teeth later. It's serendipity alright — I feel the same way about finding money in my back pocket.
Now for some quality stats, I repeat quality. These brownies were taste tested and approved by a sibling who makes it a point to eat chocolate-anything at every restaurant (he knows his chocolate) and two adults who always complain about desserts being a sweet overkill, so this hit their semi-sweet spot.
Crazy Delicious Fudgy Brownies
Makes 9 squares / contains egg
170 gm dark chocolate
113 gm butter
200 gm granulated sugar
3 eggs
32 gm cocoa powder
A pinch of salt
80 gm flour
You will also need:
A square baking dish
Rubber spatula/Wooden spoon
1. Grab a cooking vessel, fill 100 ml of water and warm on low medium. Add butter and dark chocolate in a slightly smaller bowl, place it over the large bowl and let melt. We’re using the double boiler method here to melt the chocolate and butter.
2. Remove the mixture from the heat once it is nice and runny. Whisk in sugar.
3. Add one egg at a time to the mixture while whisking.
4. Add cocoa powder and whisk again.
5. Add a pinch of salt and fold the mixture using a rubber spatula or wooden spoon. Add flour and fold again.
6. Grease the baking dish with butter and then line it with baking paper. Use steel clips if required to hold the paper in place. Pour the mixture.
7. Preheat the oven to 180°C for 10 minutes.
8. Pop the dish into the oven for 35 minutes.
9. Once done, let cool.
10. After 15-20 minutes, dip a knife into hot water, pat dry and then cut the brownies into 9 squares.
I recommend reheating the brownies and serving them with caramel or vanilla ice cream. Crazy delicious.
